53g Kodiak Cakes Buttermilk Pancake Mix
1 Medium Ripe Banana
1 Large Egg
1 Scoop (32g) Peanut Butter Cookie Vegan Protein Powder* (I use BPN Protein)
1tbsp (16g) Peanut Butter
3g semi-sweet chocolate chips
*The vegan protein is key for keeping it moist and dense! Whey protein can be used, but it will dry it out a little more.
1. Mash up the banana and egg in a microwave safe bowl/mug as best you can.
2. Slowly mix in the Kodiak Cakes and protein powder until it reaches a consistent texture.
3. Top with peanut butter and chocolate chips
4. Microwave for 2:00 - 2:15 minutes. I go with 2 minutes, because I like a somewhat gooey center.
