Ingredients (makes 8):
120g Kodiak Cakes Buttermilk Pancake Mix
2 Medium Ripe Bananas
2 Large Eggs
50g Egg Whites
2 Scoop Vegan Vanilla Protein Powder (I use BPN Protein)
Dash of cinnamon
Walnuts & chocolate chips are optional and not included in the calories and macronutrients so be sure to track them if you want to incorporate them!
Directions:
1. Preheat oven to 350F.
2. In a mixing bowl, mash up the bananas along with the eggs and egg whites.
3. Slowly mix in the Kodiak Cakes, protein powder, and cinnamon until it reaches a consistent texture.
4. Lightly spray a muffin tin and evenly distribute the batter into 8 muffins.
5. Bake for approximately 18 minutes.
