Ingredients (Makes 5 servings):
2lb 93/7 Lean Ground Beef
1 Diced Medium Sized Onion
1tbsp (14g) Sesame Oil
4tbsp (60g) Sriracha (Use 10g if you don't like spice)
6tbsp (90g) Reduced Sodium Soy Sauce
2tbsp Apple Cider Vinegar
2tbsp (30g) Minced Garlic
2tbsp (30g) Minced Ginger
2tbsp (24g) Swerve Brown Sugar (can use regular brown sugar, but make sure to account for the calories.)
Green Onion (optional garnish)
Jalapeno (optional garnish)
Directions:
1. In a bowl, mix together the sesame oil, soy sauce, sriracha, vinegar, and brown sugar. Set aside.
2. Set a skillet on medium high heat. Add in ground beef and begin chopping it up. Continue chopping and stirring the beef while folding in the onions, garlic, and ginger.
3. When the beef is nearly finished, add in the sauce from step 1. Stir to ensure all the beef is covered in the sauce. If it seems super liquidy turn the heat on high and continue to stir until it reduces. Remove from heat.
4. Distribute into meal prep containers and garnish with the scallion and jalapeño!
I prefer to serve mine with rice for some additional carbs and sugar snap peas for the veggie! Make sure you track these since they aren't accounted for in the listed calories and macronutrients. Enjoy!
