Ingredients:
8oz boneless skinless chicken thigh
8oz sweet potato raw
1/2 medium red bell pepper
2 cups (~60 g) spinach
80g yellow onion
10g olive oil
1tsp paprika
5g minced garlic
Salt and Pepper, to taste
Directions:
Cut the sweet potato into cubes, dice the onion and bell pepper.
Preheat oven or air fryer to 400F. Toss the sweet potato in 5g of the olive oil, and season with paprika, salt, and pepper. Cook until they are soft all the way through.
Add the remaining 5g of olive oil to a frying pan and place on stovetop at a medium heat. Add garlic, onion, bell pepper, salt, and pepper. Cook for 5 minutes while mixing every 1-2 minutes.
Toss in the spinach and let everything cook down until it's soft.
To cook the chicken thigh use the air fryer or grill until cooked all the way through.
Plate the sweet potato, followed by the veggie mixture, then the chicken. Hot sauce goes very well with this!
Tips:
To meal prep, multiply the amount of ingredients by however many meals you want to prepare. Cook the exact same way.
For more protein increase the amount of chicken thigh or mix in some egg whites.
For more/less carbs adjust the amount of sweet potato.
For less fat substitute chicken breast for chicken thigh.
