Ingredients (Makes 5 Servings):
2lb Chicken Breast
1tbsp Olive Oil
6oz Diced Raw Carrots
2 Sliced Celery Stalks
1/2 Chopped Sweet Onion
1tbsp Olive Oil
64oz Chicken Broth
12oz Egg Noodles
1tbsp Minced Garlic
2 Bay Leaves
1tsp Fresh Thyme
4tbsp Chopped Fresh Parsley
Salt & Pepper to taste
Directions:
1. Cook chicken breast in crockpot until shreddable. (I put mine on high for about 4 hours.)
2. Add chicken broth, bay leaves, thyme, and parsley with the chicken in the crockpot
3. Saute Onion, Carrots, Celery, and garlic in olive oil until at a texture of your liking. Add to the crockpot.
4. Bring to a boil and it's ready to eat! Noodles should be added (2.4oz dry) as you heat up each serving. This is because the noodles become mush as time passes throughout the week if all added right away. (I learned this the hard way)
