Macronutrients (per 1/6 pan):
Ingredients (makes 6 servings):
2lb Sweet Potato
2tbsp Olive Oil
24g Brown Sugar
30g Mini Marshmallows
Salt to tast
1. Bake, microwave, or boil the sweet potatoes to get them soft enough to mash.
2. Preheat oven to 375F. Peel and place sweet potatoes in a 9x9 baking dish and mash.
3. Add the olive oil and brown sugar then mix.
4. Top with marshmallows
5. Bake for 20-25 minutes or until marshmallows are slightly brown.
