Macronutrients (per serving):
Ingredients (makes 5 servings):
2.5lb Red Skin Potatoes
5 Chopped Boiled Large Eggs
100g Plain Nonfat Greek Yogurt
4tbsp (56g) Avocado/Olive Oil Mayo
~1/4 Chopped Onion (I use white)
4tsp (20g) Dijon Mustard
1tbsp Dill Seasoning
1tbsp Stevia (any calorie free sweetener)
Salt & Pepper to taste
1. Cube potatoes and cover with water in a large pot plus 1tbsp salt. Bring to a boil and simmer until soft but not mushy. Drain and set aside to cool.
2. While potatoes are cooling, Mix together the yogurt, mayo, mustard, onion, seasonings, and sweetener in a large bowl.
3. Stir in the potatoes once they are cooled off and add in the eggs at the end. ENJOY!
