Lime Chicken Quinoa Bowl

Macronutrients (Per Serving):


514 Calories

65g Protein

50g Carbohydrates

Ingredients (Makes 6 Servings):


2lb 4oz Chicken Breast

1.5 Cups Dry Quinoa (3 Success Boil-in-bags)

2 15oz Cans Black Beans Rinsed

1/2 White Onion Chopped

2/3 Cup Fresh Cilantro Chopped

2tbsp Minced Garlic

Chili Powder

Lime Juice

Salt to Taste


Directions:


1. Preheat oven to 375 and separate the chicken breast into 6 even piles on a baking sheet. Top with onions, garlic, and chili powder. Bake approximately 35 minutes or until cooked thoroughly but don't cook it too long to where it gets dried out.


2. Begin microwaving your Success Boil-in-bag quinoa pouches one at a time in 2 quarts of water for 15 minutes.


3. Once the chicken and quinoa are done, distribute the chicken, quinoa, black beans, and cilantro evenly in 6 separate meal prep containers. Top each one with a little bit of lime juice and salt to taste.
