4oz Chicken Breast
45g Quinoa (half of 1 Success boil-in-bag)
15g Sharp Cheddar
40g Enchilada Sauce
Any Colored Pepper
5g Chopped Red Onion
2g Chopped Cilantro
1. Grill chicken breast on medium high heat until cooked thoroughly but don't cook it too long to where it gets dried out. Microwave the Success boil-in-bag quinoa for 15 minutes in 2 quarts of water.
2. Preheat the oven to 350F and remove the top of your pepper while the chicken and quinoa are cooking.
3. Combine the chicken, quinoa, enchilada sauce, red onion, cumin and cilantro. Mix thoroughly and stuff it all inside the pepper and top with cheddar. Bake for 10 minutes or until the cheese is melted.
