Macronutrients (per muffin):
Ingredients (makes 6 muffins):
60g Quick Oats
21g All Purpose Flour
1 Large Egg
60g Apple Pie Filling
20g Light Brown Sugar
50g Fat Free Cream Cheese
50g Light & Fit Vanilla Greek Yogurt
1 Scoop Apple Pie Protein Powder (I use BPN Protein)
1/4 tsp Baking Powder
1/2tsp Baking Soda
1. Preheat oven to 350F
2. In a large bowl, mix oats, all purpose flour, Annex protein powder, cinnamon, stevia, baking soda, baking powder.
3. Blend together cream cheese, apple, 50g of apple pie filling, and yogurt until mixed thoroughly and runny. Add to the large bowl along with the egg. Stir.
3. Lightly spray a muffin tin and distribute the batter between 6 of the openings. Bake for 12 minutes.
4. As the muffins are cooking, mix together the brown sugar and the remaining 10g of apple pie filling. Distribute the mixture on top of each muffin and bake an additional 1-2 minutes to caramelize.
