Macronutrients (per serving):
Ingredients (makes 5 servings):
2.5lb Chicken Breast
75g Italian Bread Crumbs
15g Grated Parmesan Cheese
1 Large Egg
65g 2% Mozzarella
80g Pasta/Pizza Sauce
1. Preheat the air fryer or oven to 375F, beat the egg until mixed evenly, mix bread crumbs and parmesan in separate bowl, and slice the chicken breasts in half the long way.
2. Dip each chicken breast in the egg followed by the bread crumb/parmesan mix and place on a cooling rack on top of a baking sheet to ensure it gets crisp. (Air fryer would be a good option)
3. Bake for 20 minutes and then flip. Bake for an additional 10-15 minutes or until interior of chicken is 160 degrees. Evenly distribute pasta/pizza sauce on top of the chicken. Do the same with the mozzarella and bake for an additional 5 minutes or until the cheese is melted.
4. Serve with pasta for additional carbs.
