Ingredients (makes 6 servings):
2lb 4oz Raw Chicken Breast
1 Red Pepper
1 White Onion
1/4 cup lime juice
2 Fajita Seasoning Mix Packs (I used McCormick brand)
28g Reduced Fat Fiesta Blend Shredded Cheese (per serving)
2 100 Calorie Fajita Tortillas (per serving)
Other possible toppings include cilantro, salsa, plain nonfat greek yogurt, lime juice (these aren't accounted for in the macros.
1. In a large bowl, mix the lime juice, and the seasoning packets together. Half the chicken breasts to make them thinner and add them in the bowl. Let marinate for 1-4 hours.
2. Slice up the pepper and onion. Lightly spray frying pan and saute the onions until lightly browned. Add in the red pepper and cook until softened. Cook less if you like a little crunch.
3. Preheat the grill to a medium-high. Cook the chicken breast until cooked all the way through but don't overcook. Slice into long thin strips.
4. Distribute the chicken, onions, and peppers evenly into meal prep containers.
